TK's Delicious Breakfast Egg Nest

Although some of Dr. Gundry's eating recommendations are controversial, I feel SO MUCH better and have lost at least 5 pounds after following the diet fairly closely for one month. Dr. Gundry is a Cardiologist and since I am 12 years and counting from experiencing a Ross procedure Aortic Valve Replacement, I feel that following his diet is a good fit for me, at this time in my life.
TK's Delicious Breakfast Egg Nest
Set oven to 350 degrees
Ingredients:
1 pasture-raised egg
1 and 1/2 cups of organic kale or kale and spinach mix
1 large clove garlic, minced
2 T Organic Extra-virgin olive oil
1/2 tsp. iodized sea salt
1/2 small Hass avocado, cut into slices, but scooped out of the skin as a whole

Directions:
* Saute 1 and 1/2 cups kale, 1 minced garlic clove, and sea salt to taste in a small saute pan for
approximately 3 minutes
* Pour 1 T olive oil into a ramekin
* Add sauteed kale mixture to the oil in the ramekin
* Set 1/2 avocado on top of the kale in the ramekin
* Crack 1 egg into the center of the avocado (no worry if it spills over)
* Add 1 T pesto sauce on top of the egg.
Bake in a 350-degree oven for approximately 20 minutes, or until egg has set. Enjoy your nest of deliciousness! This recipe is SO EASY, too!
